As long as one system is not on when the others are it shouldn't be a problem with a straight joypad hack... the only problem you might have is that one contact on the X button on the SNES or whatever might be the same as the Y button on the Saturn thereby making the Z button always on the SNES even though it's not...
I'm sure that makes no sense.
You might want to put a rotary switch on the control panel that switches between consoles and consequently switches a bank of relays ( or a microchip verision of such a thing ) that would not only "turn on" the controllers for the console but would also actually turn on the console.
Of course it's all far more work than you actually should endure when you can just use ZSNes or something... :)
