Arcadeos / Advancemame with an arcade monitor - problems

Hi there to the helpful reader :)

3 questions since my knowledge of arcade monitor problems and frequencies is a tad low :( But learning at least :)))
Q1 : when Arcadeos is used, the .cfg is edited to output to a arcademonitor and it is launched. For some reason though, the 'resolution' [I think it's the res at least] is too high -> making the menu unreadable. Is there some way to change this [eg : only 20 games visible / page instead of 100 :) ]. A month ago, I tried it with a Geforce2 and it worked ok. Strange stuff is happening...
Q2 : next up was AdvanceMame -> I have an Intervideo 28'' with HFreq 15.625Khz +/- 500hz and VFreq = 50 Hz. Only the standard 15Khz default arcademonitor will yield a decent first test image but the modes after this are either fast scrolling or erratic. Why oh why? :( Yeps, even tried adding a custom monitor with the above parameters but this hasn't produced anything positive [even worse if I may say so]
Q3 : Pacman and vertical games like that -> again, a month ago I gave them a whirl with ArcadeOS but they were 'tiny' when playing horizontally >>> is there a way to play them 'stretched' in some way [let me guess? Could the answer be AdvMame? hehe]. Any horizontal game came up perfectly...
