then svideo TV

then 'B' grade VGA monitor (like EYGO monitors). Large low grade monitors. And free scanlines

then SVGA monitor. Their small pixels look really blocky at low resolutions.

Take a look around for the pictures of Spy Hunter with a SVideo TV and a SVGA monitor (same look with a EYGO monitor)

but in the easy of use it goes like this
1) SVGA (allows easier PC games)
2) 'B' grade VGA monitor
3) SVideo
4) Arcade CRT.

(notice they are backwards)
I have a 'b' grade monitor and would go SVideo if I could do it again. I'm probably going to try a Arcade CRT for a cocktail table when I get to that since I have a 19" arcade CRT already (free always moves to the top the list).

I would recommend this
1) use what you have.
2) And design the cabinet to be changeable if possible since you might need to get another CRT at some point and the best might be different.
3) Then svid TV. Mainly since it has other uses and also allows you to plug in consoles if you want.
